
Summer Chicken Caprese Bake

Ingredients:
- 4 pieces Boneless, skinless chicken breasts
- 8 slices Fresh mozzarella slices
- 1/2 cup Fresh basil leaves
- 2 pieces Fresh tomatoes
- 2 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- to taste Salt
- to taste Pepper
- 4 slices Whole grain bread
Instructions:
- 1. Preheat your oven to 400 degrees Fahrenheit.
- 2. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Place them in a baking dish.
- 3. Arrange slices of fresh mozzarella on each chicken breast, followed by slices of tomato and then a couple of basil leaves.
- 4. Drizzle with a bit more olive oil and a splash of balsamic vinegar over the top.
- 5. Bake in the preheated oven for about 25 minutes, or until the chicken is cooked through and the mozzarella is melted and bubbly.
- 6. While the chicken is baking, toast your whole grain bread slices.
- 7. Serve the chicken hot, with the toasted whole grain bread on the side for added fiber.
