Summer Chicken Caprese Bake

Ingredients:

  • 4 pieces Boneless, skinless chicken breasts
  • 8 slices Fresh mozzarella slices
  • 1/2 cup Fresh basil leaves
  • 2 pieces Fresh tomatoes
  • 2 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • to taste Salt
  • to taste Pepper
  • 4 slices Whole grain bread

Instructions:

  1. 1. Preheat your oven to 400 degrees Fahrenheit.
  2. 2. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Place them in a baking dish.
  3. 3. Arrange slices of fresh mozzarella on each chicken breast, followed by slices of tomato and then a couple of basil leaves.
  4. 4. Drizzle with a bit more olive oil and a splash of balsamic vinegar over the top.
  5. 5. Bake in the preheated oven for about 25 minutes, or until the chicken is cooked through and the mozzarella is melted and bubbly.
  6. 6. While the chicken is baking, toast your whole grain bread slices.
  7. 7. Serve the chicken hot, with the toasted whole grain bread on the side for added fiber.
