
Summer Chicken Bruschetta

Ingredients:
- 4 piece Chicken breast
- 2 tablespoons Olive oil
- 2 pieces Garlic cloves
- 1 loaf French bread or Baguette
- 3 pieces Fresh tomatoes
- 1/2 cup Fresh basil leaves
- 2 tablespoons Balsamic vinegar
- to taste Salt and pepper
Instructions:
- Preheat your oven to 375°F (190°C).
- Rinse the chicken breasts and pat dry. Rub with 1 tablespoon of olive oil, the crushed garlic, salt, and pepper. Place on a baking sheet.
- Bake the chicken in the preheated oven for 15-20 minutes, until it's cooked through and no longer pink in the middle.
- While the chicken is cooking, slice the baguette into thick slices and arrange on a baking tray. Drizzle with the remaining olive oil.
- Pop the tray in the oven and bake the bread for about 10-12 minutes, or until crispy and golden.
- Dice the fresh tomatoes and mix in a bowl with the chopped fresh basil and balsamic vinegar. Season with salt and pepper.
- Once the chicken is cooked, let it rest for a few minutes then cut into small pieces.
- Top each piece of bruschetta with the chicken pieces and tomato-basil mix.
- Serve immediately while warm. Buon appetito!
