Summer Chicken Bruschetta

Ingredients:

  • 4 piece Chicken breast
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves
  • 1 loaf French bread or Baguette
  • 3 pieces Fresh tomatoes
  • 1/2 cup Fresh basil leaves
  • 2 tablespoons Balsamic vinegar
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken breasts and pat dry. Rub with 1 tablespoon of olive oil, the crushed garlic, salt, and pepper. Place on a baking sheet.
  3. Bake the chicken in the preheated oven for 15-20 minutes, until it's cooked through and no longer pink in the middle.
  4. While the chicken is cooking, slice the baguette into thick slices and arrange on a baking tray. Drizzle with the remaining olive oil.
  5. Pop the tray in the oven and bake the bread for about 10-12 minutes, or until crispy and golden.
  6. Dice the fresh tomatoes and mix in a bowl with the chopped fresh basil and balsamic vinegar. Season with salt and pepper.
  7. Once the chicken is cooked, let it rest for a few minutes then cut into small pieces.
  8. Top each piece of bruschetta with the chicken pieces and tomato-basil mix.
  9. Serve immediately while warm. Buon appetito!
