Summer Breakfast Italian Chicken Bake

Ingredients:

  • 4 pieces Boneless chicken breasts
  • 2 tablespoons Olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Garlic powder
  • 2 large Fresh tomatoes
  • 2 cups Mozzarella cheese
  • 1 bunch Fresh basil
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken breasts and pat them dry. Brush both sides of the chicken breasts with the olive oil.
  3. In a small bowl, mix together the Italian seasoning, garlic powder, salt, and pepper. Rub this mixture all over the chicken breasts.
  4. Place the seasoned chicken breasts in a baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  5. While the chicken is baking, slice the tomatoes and tear the basil into small pieces.
  6. Remove the chicken from the oven and top each breast with the sliced tomatoes, basil, and the mozzarella cheese.
  7. Return the chicken to the oven and bake for an additional 5-10 minutes, or until the cheese is melty and slightly browned.
