
Summer Breakfast Italian Chicken Bake

Ingredients:
- 4 pieces Boneless chicken breasts
- 2 tablespoons Olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon Garlic powder
- 2 large Fresh tomatoes
- 2 cups Mozzarella cheese
- 1 bunch Fresh basil
- to taste Salt
- to taste Black pepper
Instructions:
- Preheat your oven to 375°F (190°C).
- Rinse the chicken breasts and pat them dry. Brush both sides of the chicken breasts with the olive oil.
- In a small bowl, mix together the Italian seasoning, garlic powder, salt, and pepper. Rub this mixture all over the chicken breasts.
- Place the seasoned chicken breasts in a baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- While the chicken is baking, slice the tomatoes and tear the basil into small pieces.
- Remove the chicken from the oven and top each breast with the sliced tomatoes, basil, and the mozzarella cheese.
- Return the chicken to the oven and bake for an additional 5-10 minutes, or until the cheese is melty and slightly browned.
