Summer Breakfast Chicken Caprese Bake

Ingredients:
- 4 pieces Boneless, skinless chicken breasts
- 2 Ripe tomatoes
- 1 cup Mozzarella cheese
- 1/3 cup Fresh basil leaves
- 1/4 cup Olive oil
- 1/4 cup Balsamic vinegar
- to taste Salt
- to taste Pepper
- 1/2 cup Whole grain bread crumbs
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- Place the chicken breasts in a baking dish.
- Slice the tomatoes and arrange them on top of the chicken. Top with mozzarella cheese.
- Tear the basil leaves and scatter them on top.
- In a small bowl, combine the olive oil and balsamic vinegar then drizzle over the chicken.
- Season with salt and pepper to taste.
- Sprinkle the whole grain bread crumbs on top for added fiber.
- Bake in the preheated oven for approximately 45 minutes, or until the chicken is cooked through and the cheese is bubbly and slightly golden.
- Serve warm and enjoy a comforting, Italian summer breakfast!
