Summer Breakfast Chicken Caprese Bake

Ingredients:

  • 4 pieces Boneless, skinless chicken breasts
  • 2 Ripe tomatoes
  • 1 cup Mozzarella cheese
  • 1/3 cup Fresh basil leaves
  • 1/4 cup Olive oil
  • 1/4 cup Balsamic vinegar
  • to taste Salt
  • to taste Pepper
  • 1/2 cup Whole grain bread crumbs

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Place the chicken breasts in a baking dish.
  3. Slice the tomatoes and arrange them on top of the chicken. Top with mozzarella cheese.
  4. Tear the basil leaves and scatter them on top.
  5. In a small bowl, combine the olive oil and balsamic vinegar then drizzle over the chicken.
  6. Season with salt and pepper to taste.
  7. Sprinkle the whole grain bread crumbs on top for added fiber.
  8. Bake in the preheated oven for approximately 45 minutes, or until the chicken is cooked through and the cheese is bubbly and slightly golden.
  9. Serve warm and enjoy a comforting, Italian summer breakfast!
