Stir-Fried Mixed Vegetables with Tofu

Ingredients:

  • 1 block Extra Firm Tofu
  • 2 tablespoon Sesame oil
  • 4 cloves Garlic
  • 1 large Red bell pepper
  • 2 medium-sized Carrot
  • 1.5 cups Broccoli florets
  • 1 cup Snow peas
  • 3 tablespoon Low-sodium Soy sauce
  • 1 tablespoon Rice Vinegar
  • 1/2 teaspoon Ground black pepper

Instructions:

  1. Start by cutting tofu into 1 inch cubes. Set aside.
  2. Heat up sesame oil in a large wok or skillet over medium-high heat.
  3. Add minced garlic to the oil and let it sizzle until it's fragrant.
  4. Add the tofu cubes to the pan, cook until they are golden on all sides. Once done, remove tofu from the pan and set aside.
  5. In the same pan, add pepper, carrots, broccoli, and snow peas. Stir fry until they have softened
  6. In a separate bowl, mix together soy sauce and rice vinegar.
  7. Add tofu back into the pan along with the mixed sauce. Stir everything together well, ensuring that all ingredients are coated with the sauce.
  8. Season with black pepper to taste and serve immediately.
