
Stir-Fried Mixed Vegetables with Tofu

Ingredients:
- 1 block Extra Firm Tofu
- 2 tablespoon Sesame oil
- 4 cloves Garlic
- 1 large Red bell pepper
- 2 medium-sized Carrot
- 1.5 cups Broccoli florets
- 1 cup Snow peas
- 3 tablespoon Low-sodium Soy sauce
- 1 tablespoon Rice Vinegar
- 1/2 teaspoon Ground black pepper
Instructions:
- Start by cutting tofu into 1 inch cubes. Set aside.
- Heat up sesame oil in a large wok or skillet over medium-high heat.
- Add minced garlic to the oil and let it sizzle until it's fragrant.
- Add the tofu cubes to the pan, cook until they are golden on all sides. Once done, remove tofu from the pan and set aside.
- In the same pan, add pepper, carrots, broccoli, and snow peas. Stir fry until they have softened
- In a separate bowl, mix together soy sauce and rice vinegar.
- Add tofu back into the pan along with the mixed sauce. Stir everything together well, ensuring that all ingredients are coated with the sauce.
- Season with black pepper to taste and serve immediately.
