
Stir-Fried Mixed Vegetables Chinese Style

Ingredients:
- 1 medium Carrot
- 1 medium Red bell pepper
- 1 cup Broccoli
- 1 cup Snow peas
- 1 medium Yellow bell pepper
- 3 Garlic cloves
- 2 tablespoons Sesame oil
- 3 tablespoons Soy sauce
- 1 inch, grated Fresh ginger
- 2 chopped Scallions
- to taste Salt
- to taste Black pepper
Instructions:
- Prepare all vegetables. Cut the carrot, bell peppers into thin strips, broccoli into small florets, and remove the stem ends from the snow peas.
- Peel and mince the garlic and grate the ginger.
- Heat the sesame oil in a large skillet or wok over medium high heat.
- Add the garlic and ginger to the skillet and cook for about 30 seconds, until fragrant.
- Add all the vegetables to the skillet and stir-fry for about 5-7 minutes, until vegetables are just tender.
- Pour in the soy sauce and stir well to coat all the vegetables.
- Season with salt and black pepper to taste.
- Garnish with chopped scallions and serve immediately.
