Stir-Fried Mixed Vegetables Chinese Style

Ingredients:

  • 1 medium Carrot
  • 1 medium Red bell pepper
  • 1 cup Broccoli
  • 1 cup Snow peas
  • 1 medium Yellow bell pepper
  • 3 Garlic cloves
  • 2 tablespoons Sesame oil
  • 3 tablespoons Soy sauce
  • 1 inch, grated Fresh ginger
  • 2 chopped Scallions
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Prepare all vegetables. Cut the carrot, bell peppers into thin strips, broccoli into small florets, and remove the stem ends from the snow peas.
  2. Peel and mince the garlic and grate the ginger.
  3. Heat the sesame oil in a large skillet or wok over medium high heat.
  4. Add the garlic and ginger to the skillet and cook for about 30 seconds, until fragrant.
  5. Add all the vegetables to the skillet and stir-fry for about 5-7 minutes, until vegetables are just tender.
  6. Pour in the soy sauce and stir well to coat all the vegetables.
  7. Season with salt and black pepper to taste.
  8. Garnish with chopped scallions and serve immediately.
