Steamed Chinese Breakfast Fish

Ingredients:

  • 1 piece Whole white fish (called Bai Yu)
  • 2 inch Fresh ginger
  • 4-5 pieces Spring onions
  • 4 spoons Soy sauce
  • 1 spoon Sesame oil
  • 1 spoon Rice wine or dry sherry
  • 1 teaspoon Sugar
  • 1 cup Low salt vegetable stock
  • 1 bunch Coriander

Instructions:

  1. Clean the fish and pat it dry. Make diagonal cuts on both sides of the fish.
  2. Peel and slice the ginger into thin strips.
  3. Chop the spring onions into 2-inch pieces. Slice some thinly for garnish.
  4. Combine soy sauce, sesame oil, sherry or rice wine, sugar and vegetable stock in a bowl and mix well.
  5. Place the fish in a steamer. Spread the ginger strips and chopped spring onions on top.
  6. Pour the sauce mixture over the fish.
  7. Steam the fish on high heat for about 15 to 20 minutes. The exact steaming time depends on the size and thickness of your fish.
  8. Garnish with thinly sliced spring onion and fresh coriander before serving.
