
Steamed Chinese Breakfast Fish

Ingredients:
- 1 piece Whole white fish (called Bai Yu)
- 2 inch Fresh ginger
- 4-5 pieces Spring onions
- 4 spoons Soy sauce
- 1 spoon Sesame oil
- 1 spoon Rice wine or dry sherry
- 1 teaspoon Sugar
- 1 cup Low salt vegetable stock
- 1 bunch Coriander
Instructions:
- Clean the fish and pat it dry. Make diagonal cuts on both sides of the fish.
- Peel and slice the ginger into thin strips.
- Chop the spring onions into 2-inch pieces. Slice some thinly for garnish.
- Combine soy sauce, sesame oil, sherry or rice wine, sugar and vegetable stock in a bowl and mix well.
- Place the fish in a steamer. Spread the ginger strips and chopped spring onions on top.
- Pour the sauce mixture over the fish.
- Steam the fish on high heat for about 15 to 20 minutes. The exact steaming time depends on the size and thickness of your fish.
- Garnish with thinly sliced spring onion and fresh coriander before serving.
