
Steak Tartare à la Française

Ingredients:
- 200 grams Lean Beef Steak (like filet mignon)
- 2 tablespoons Capers
- 1 tablespoon Dijon mustard
- 1 small, finely diced Shallot
- 2 tablespoons, finely chopped Parsley
- few drops Worcestershire sauce
- 2 Fresh egg yolks
- to taste Tabasco Sauce
- to taste Salt and black pepper
Instructions:
- Place the beef in the freezer for about 15 minutes to firm up, it makes it easier to chop.
- While the beef is cooling, prepare the rest of the ingredients by finely chopping the capers, shallot, and parsley and set aside.
- Once the beef is slightly firm, chop it into very small pieces. A very sharp knife is vital here.
- Put the chopped beef into a bowl and mix with capers, mustard, diced shallot, chopped parsley, Worcestershire sauce, egg yolks, tabasco, salt and pepper.
- Plate the tartare by using a ring mold. Press the tartare into the mold to create a neat disk, then carefully remove the mold.
- Serve immediately alongside crispy fries or toast points and a small salad, if desired.
