Steak Tartare à la Française

Ingredients:

  • 200 grams Lean Beef Steak (like filet mignon)
  • 2 tablespoons Capers
  • 1 tablespoon Dijon mustard
  • 1 small, finely diced Shallot
  • 2 tablespoons, finely chopped Parsley
  • few drops Worcestershire sauce
  • 2 Fresh egg yolks
  • to taste Tabasco Sauce
  • to taste Salt and black pepper

Instructions:

  1. Place the beef in the freezer for about 15 minutes to firm up, it makes it easier to chop.
  2. While the beef is cooling, prepare the rest of the ingredients by finely chopping the capers, shallot, and parsley and set aside.
  3. Once the beef is slightly firm, chop it into very small pieces. A very sharp knife is vital here.
  4. Put the chopped beef into a bowl and mix with capers, mustard, diced shallot, chopped parsley, Worcestershire sauce, egg yolks, tabasco, salt and pepper.
  5. Plate the tartare by using a ring mold. Press the tartare into the mold to create a neat disk, then carefully remove the mold.
  6. Serve immediately alongside crispy fries or toast points and a small salad, if desired.
