
Spicy Veggie Loaded Nachos

Ingredients:
- 1 bag tortilla chips
- 2 cups cheddar cheese
- 1 can black beans
- 2 pieces jalapeno peppers
- 1 piece ripe avocado
- 1 bunch fresh cilantro
- 1 cup whole corn kernels
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Instructions:
- Preheat the oven to 375F.
- Spread the tortilla chips in a single layer on a baking sheet.
- Drizzle the chips with olive oil and sprinkle with half the cheese.
- Rinse and drain the black beans, then scatter them over the chips.
- Slice the jalapenos and scatter them over the beans.
- Sprinkle the remaining cheese over the top.
- Bake the nachos in the preheated oven until the cheese is melted and bubbly, about 15 minutes.
- While the nachos are baking, dice the avocado and chop the cilantro.
- Remove the nachos from the oven and top with the avocado, cilantro, and corn.
- Season with salt and pepper to taste before serving.
