Spicy Veggie Loaded Nachos

Ingredients:

  • 1 bag tortilla chips
  • 2 cups cheddar cheese
  • 1 can black beans
  • 2 pieces jalapeno peppers
  • 1 piece ripe avocado
  • 1 bunch fresh cilantro
  • 1 cup whole corn kernels
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Instructions:

  1. Preheat the oven to 375F.
  2. Spread the tortilla chips in a single layer on a baking sheet.
  3. Drizzle the chips with olive oil and sprinkle with half the cheese.
  4. Rinse and drain the black beans, then scatter them over the chips.
  5. Slice the jalapenos and scatter them over the beans.
  6. Sprinkle the remaining cheese over the top.
  7. Bake the nachos in the preheated oven until the cheese is melted and bubbly, about 15 minutes.
  8. While the nachos are baking, dice the avocado and chop the cilantro.
  9. Remove the nachos from the oven and top with the avocado, cilantro, and corn.
  10. Season with salt and pepper to taste before serving.
