Spicy Vegetarian Lasagna

Ingredients:

  • 12 pieces Lasagna noodles
  • 2 tbsp Olive oil
  • 3 cloves Garlic
  • 4 cups Mixed vegetables (Zucchini, Bell peppers, Mushrooms)
  • 2 cups Tomato sauce
  • 1 tsp Red pepper flakes
  • 2 cups Ricotta cheese
  • 1.5 cups Mozzarella cheese
  • 1 cup Parmesan cheese
  • handful Fresh basils
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 375 degrees.
  2. Cook the lasagna noodles according to the package directions. Drain and set aside.
  3. Heat the oil in a large pan over medium heat. Add the garlic and cook until golden. Add the mixed vegetables and cook until tender, about 5-7 minutes. Season with salt and pepper.
  4. Add the tomato sauce and red pepper flakes to the pan, stir well. Bring to a simmer and cook for 10 minutes.
  5. In a bowl, combine the ricotta, half of the mozzarella and half of the Parmesan. Season with salt and pepper.
  6. To assemble the lasagna, spread a layer of the sauce at the bottom of a baking dish. Add a layer of noodles, then a layer of the cheese mixture. Repeat until all ingredients are used, ending with a layer of sauce and cheese on top.
  7. Cover the lasagna with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 15-20 minutes, or until the cheese is bubbling and golden.
  8. Allow the lasagna to stand for 10 minutes before sprinkling with fresh basils and serving.
