Spicy Vegetable Tempura

Ingredients:

  • 2 cups Mixed Vegetables (like bell peppers, sweet potatoes, and broccoli)
  • 1 cup Cornflour
  • 1.5 cups Cold Soda Water
  • as needed Vegetable Oil
  • 0.5 cup Soy Sauce
  • 0.25 cup Mirin
  • 1 tablespoon Wasabi Paste
  • 0.25 teaspoon Cayenne Pepper

Instructions:

  1. Wash and cut the vegetables into bite-sized pieces.
  2. Pour vegetable oil into a pan until it is about half full and heat it on a medium flame.
  3. While the oil is heating, prepare the tempura batter. Mix together cornflour, cold soda water and cayenne pepper until it forms a thin and lump-free batter.
  4. Dip each piece of vegetable into the batter, ensuring it is fully coated, and then add it gently into the pan. Cook each side for around 2 minutes or until golden brown.
  5. When done, use a slotted spoon to remove the vegetables from the oil and drain on kitchen paper.
  6. To make the spicy dipping sauce, combine the soy sauce, mirin, and wasabi paste. Adjust the amount of wasabi based on your spice preference.
  7. Serve the vegetable tempura hot with the spicy dipping sauce on the side.
