
Spicy Vegetable Tempura

Ingredients:
- 2 cups Mixed Vegetables (like bell peppers, sweet potatoes, and broccoli)
- 1 cup Cornflour
- 1.5 cups Cold Soda Water
- as needed Vegetable Oil
- 0.5 cup Soy Sauce
- 0.25 cup Mirin
- 1 tablespoon Wasabi Paste
- 0.25 teaspoon Cayenne Pepper
Instructions:
- Wash and cut the vegetables into bite-sized pieces.
- Pour vegetable oil into a pan until it is about half full and heat it on a medium flame.
- While the oil is heating, prepare the tempura batter. Mix together cornflour, cold soda water and cayenne pepper until it forms a thin and lump-free batter.
- Dip each piece of vegetable into the batter, ensuring it is fully coated, and then add it gently into the pan. Cook each side for around 2 minutes or until golden brown.
- When done, use a slotted spoon to remove the vegetables from the oil and drain on kitchen paper.
- To make the spicy dipping sauce, combine the soy sauce, mirin, and wasabi paste. Adjust the amount of wasabi based on your spice preference.
- Serve the vegetable tempura hot with the spicy dipping sauce on the side.
