Spicy Vegetable Stir Fry

Ingredients:

  • 2 whole carrots
  • 2 whole bell peppers
  • 1 head broccoli
  • 1 whole onions
  • 3 whole garlic cloves
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper

Instructions:

  1. Peel and thinly slice the carrots, onions, and garlic.
  2. Seed and thinly slice the bell peppers.
  3. Cut the broccoli into bite-sized pieces.
  4. Heat the vegetable oil in a large skillet over medium-high heat.
  5. Add the onions and garlic and sauté until they start to soften, about 3 minutes.
  6. Add the bell peppers, carrots, and broccoli and stir-fry for another 5 minutes, or until all the vegetables are tender.
  7. Drizzle the soy sauce over the vegetables and sprinkle with the red pepper flakes and black pepper.
  8. Continue stirring and cooking for another 2-3 minutes.
  9. Taste and adjust seasoning if necessary. Serve hot.
