
Spicy Vegetable Scramble

Ingredients:
- 4 units Eggs
- 1 cup Bell peppers
- 0.5 cup Onion
- 2 cloves Garlic
- 1 unit Jalapeno pepper
- 1 unit Tomato
- 0.5 cup Cheddar cheese
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
- 2 tablespoons Olive oil
Instructions:
- Heat olive oil in a large skillet over medium heat. Add onions, bell peppers, and minced jalapeno pepper to the skillet and cook for 5 minutes, until the veggies are tender.
- Add the minced garlic and cook for another minute, until the garlic is fragrant.
- In a bowl, whisk the eggs with salt and black pepper. Pour the egg mixture into the skillet and stir gently, mixing the eggs with the veggies.
- Cook for 3-5 minutes, until the eggs are almost set. Add the diced tomato to the skillet and continue to cook for another 2 minutes.
- Sprinkle the grated cheddar cheese over the egg mixture and cover the skillet. Cook for 2-3 minutes, or until the cheese is melted and the eggs are fully cooked.
- Remove the skillet from heat and let the scramble sit for a minute before serving.
