
Spicy Vegetable Ratatouille

Ingredients:
- 2 tablespoons Olive oil
- 1 medium size, chopped Red onion
- 1 large size, chopped Red bell pepper
- 2 medium size, chopped Zucchini
- 1 medium size, chopped Eggplant
- 4 medium size, chopped Tomatoes
- 3 minced Garlic cloves
- 1 teaspoon Thyme
- to taste Salt and Pepper
- 1 teaspoon Red chili flakes
- few sprigs chopped for garnish Parsley
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, sauté until softened.
- Add in the chopped zucchini, eggplant and cook for about 5 minutes until they are softened and start to brown.
- Add in the tomatoes, minced garlic, thyme, and red chili flakes. Stir well to combine.
- Cover the skillet and let it simmer over low heat for about 15-20 minutes, stirring occasionally until the vegetables are softened.
- Season with salt, pepper, and more red chili flakes if desired.
- Garnish the ratatouille with chopped parsley before serving.
