Spicy Vegetable Ratatouille

Ingredients:

  • 2 tablespoons Olive oil
  • 1 medium size, chopped Red onion
  • 1 large size, chopped Red bell pepper
  • 2 medium size, chopped Zucchini
  • 1 medium size, chopped Eggplant
  • 4 medium size, chopped Tomatoes
  • 3 minced Garlic cloves
  • 1 teaspoon Thyme
  • to taste Salt and Pepper
  • 1 teaspoon Red chili flakes
  • few sprigs chopped for garnish Parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, sauté until softened.
  2. Add in the chopped zucchini, eggplant and cook for about 5 minutes until they are softened and start to brown.
  3. Add in the tomatoes, minced garlic, thyme, and red chili flakes. Stir well to combine.
  4. Cover the skillet and let it simmer over low heat for about 15-20 minutes, stirring occasionally until the vegetables are softened.
  5. Season with salt, pepper, and more red chili flakes if desired.
  6. Garnish the ratatouille with chopped parsley before serving.
