
Spicy Vegetable Breakfast Tacos

Ingredients:
- 2 pcs bell peppers
- 1 pc onion
- 1 pc zucchini
- 2 pcs jalapenos
- 2 tbsp olive oil
- 4 pcs eggs
- 8 pcs flour tortillas
- 1 cup cheddar cheese
- to taste salt and pepper
- as needed salsa
Instructions:
- Dice the bell peppers, onions, zucchini, and jalapenos.
- Heat olive oil in a pan on medium heat, add the diced vegetables and cook until softened.
- On the side, beat the eggs and then pour into the pan, stirring gently with the vegetables. Add salt and pepper to taste.
- Cook until the eggs are scrambled and fully cooked. Then, remove from heat.
- Heat the tortillas on a pan until they're warm and flexible.
- Place a scoop of the scrambled eggs and vegetables on each tortilla, then top with cheese and salsa.
- Fold the tortilla in half and serve hot. Enjoy your spicy vegetable breakfast taco!
