Spicy Vegetable Breakfast Tacos

Ingredients:

  • 2 pcs bell peppers
  • 1 pc onion
  • 1 pc zucchini
  • 2 pcs jalapenos
  • 2 tbsp olive oil
  • 4 pcs eggs
  • 8 pcs flour tortillas
  • 1 cup cheddar cheese
  • to taste salt and pepper
  • as needed salsa

Instructions:

  1. Dice the bell peppers, onions, zucchini, and jalapenos.
  2. Heat olive oil in a pan on medium heat, add the diced vegetables and cook until softened.
  3. On the side, beat the eggs and then pour into the pan, stirring gently with the vegetables. Add salt and pepper to taste.
  4. Cook until the eggs are scrambled and fully cooked. Then, remove from heat.
  5. Heat the tortillas on a pan until they're warm and flexible.
  6. Place a scoop of the scrambled eggs and vegetables on each tortilla, then top with cheese and salsa.
  7. Fold the tortilla in half and serve hot. Enjoy your spicy vegetable breakfast taco!
