Total Time: 50 minutes

Ingredients:

  • 2 cups Basmati rice
  • 2 cups Mixed vegetables (carrots, peas, beans, cauliflower)
  • 1 Onion
  • 1 Tomato
  • 2 Green chilies
  • 1 tbsp Ginger-garlic paste
  • 1 cup Yogurt
  • 2 tbsp Biryani masala
  • 2 tbsp Ghee
  • 1 bunch Fresh cilantro

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.
  2. In a pan, melt the ghee and add chopped onions and green chilies. Fry until the onions become translucent.
  3. Add the ginger-garlic paste and chopped tomato. Stir well until the tomatoes soften.
  4. Stir in the mixed vegetables and cook for a few minutes.
  5. Add the Biryani masala into the pan and mix well.
  6. Stir in the yogurt and allow it to cook for a few minutes until the vegetables are well coated with the masala and yogurt.
  7. In a separate pot, bring water to a boil and add the drained rice. Cook the rice until it's 70% done. Then drain it.
  8. Layer the partially cooked rice over the vegetables in the pan and spread the chopped cilantro on top.
  9. Cover the pan with a lid and cook on low heat for about 20 minutes, or until the rice is fully cooked and the flavors have combined.
  10. Serve your spicy vegetable biryani hot with a side of yogurt or raita.
