
Spicy Vegetable Biryani

Ingredients:
- 2 cups Basmati rice
- 2 cups Mixed vegetables (carrots, peas, beans, cauliflower)
- 1 Onion
- 1 Tomato
- 2 Green chilies
- 1 tbsp Ginger-garlic paste
- 1 cup Yogurt
- 2 tbsp Biryani masala
- 2 tbsp Ghee
- 1 bunch Fresh cilantro
Instructions:
- Rinse the rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.
- In a pan, melt the ghee and add chopped onions and green chilies. Fry until the onions become translucent.
- Add the ginger-garlic paste and chopped tomato. Stir well until the tomatoes soften.
- Stir in the mixed vegetables and cook for a few minutes.
- Add the Biryani masala into the pan and mix well.
- Stir in the yogurt and allow it to cook for a few minutes until the vegetables are well coated with the masala and yogurt.
- In a separate pot, bring water to a boil and add the drained rice. Cook the rice until it's 70% done. Then drain it.
- Layer the partially cooked rice over the vegetables in the pan and spread the chopped cilantro on top.
- Cover the pan with a lid and cook on low heat for about 20 minutes, or until the rice is fully cooked and the flavors have combined.
- Serve your spicy vegetable biryani hot with a side of yogurt or raita.
