
Spicy Thai Vegetable Stir-Fry

Ingredients:
- 2 tablespoons Vegetable oil
- 2 Garlic cloves, minced
- 2 Fresh red chili pepper, finely chopped
- 4 cups Mixed vegetables (such as bell peppers, carrot, broccoli, snap peas)
- 2 tablespoons Soy sauce
- 1 tablespoon Fish sauce
- 1 teaspoon Sugar
- handful Basil leaves, fresh
Instructions:
- Heat the vegetable oil in a large wok or frying pan over medium high heat.
- Add the minced garlic and chopped chili to the pan and stir-fry for about a minute, until fragrant.
- Add the mixed vegetables to the pan and stir-fry for about 5-7 minutes, until they are tender but still crisp.
- In a small bowl, mix together the soy sauce, fish sauce, and sugar. Pour this sauce over the vegetables and stir well to combine.
- Stir in the fresh basil leaves and continue to stir-fry for another minute, until the basil is wilted and fragrant.
- Serve the stir-fry hot, with rice or noodles as desired.
