Spicy Thai Vegetable Stir-Fry

Ingredients:

  • 2 tablespoons Vegetable oil
  • 2 Garlic cloves, minced
  • 2 Fresh red chili pepper, finely chopped
  • 4 cups Mixed vegetables (such as bell peppers, carrot, broccoli, snap peas)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • handful Basil leaves, fresh

Instructions:

  1. Heat the vegetable oil in a large wok or frying pan over medium high heat.
  2. Add the minced garlic and chopped chili to the pan and stir-fry for about a minute, until fragrant.
  3. Add the mixed vegetables to the pan and stir-fry for about 5-7 minutes, until they are tender but still crisp.
  4. In a small bowl, mix together the soy sauce, fish sauce, and sugar. Pour this sauce over the vegetables and stir well to combine.
  5. Stir in the fresh basil leaves and continue to stir-fry for another minute, until the basil is wilted and fragrant.
  6. Serve the stir-fry hot, with rice or noodles as desired.
