Spicy Thai Seafood Stir-fry Breakfast

Ingredients:

  • 200 grams Shrimp
  • 250 grams Squid
  • 200 grams Scallops
  • 4 Thai bird chillies
  • 3 cloves Garlic
  • 2 tablespoons Fish sauce
  • 1 tablespoon Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 cup Basil leaves
  • 2 tablespoons Cooking oil

Instructions:

  1. Clean and prepare all the seafood.
  2. Chop the Thai bird chillies and garlic.
  3. Heat the cooking oil in a wok or large pan over medium-high heat.
  4. Once the oil is hot, add the garlic and chillies. Stir-fry for a few seconds until aromatic.
  5. Add the seafood, stirring often, until it is just cooked - the shrimp should be pink, the squid should be firm and the scallops should be slightly translucent in the centre.
  6. Add the fish sauce, soy sauce, and oyster sauce to the pan and stir well to coat the seafood.
  7. Finally, add the basil leaves and stir until they are wilted and incorporated.
  8. Serve hot, ideally with a side of steamed jasmine rice.
