
Spicy Thai Seafood Stir-fry Breakfast

Ingredients:
- 200 grams Shrimp
- 250 grams Squid
- 200 grams Scallops
- 4 Thai bird chillies
- 3 cloves Garlic
- 2 tablespoons Fish sauce
- 1 tablespoon Soy sauce
- 2 tablespoons Oyster sauce
- 1 cup Basil leaves
- 2 tablespoons Cooking oil
Instructions:
- Clean and prepare all the seafood.
- Chop the Thai bird chillies and garlic.
- Heat the cooking oil in a wok or large pan over medium-high heat.
- Once the oil is hot, add the garlic and chillies. Stir-fry for a few seconds until aromatic.
- Add the seafood, stirring often, until it is just cooked - the shrimp should be pink, the squid should be firm and the scallops should be slightly translucent in the centre.
- Add the fish sauce, soy sauce, and oyster sauce to the pan and stir well to coat the seafood.
- Finally, add the basil leaves and stir until they are wilted and incorporated.
- Serve hot, ideally with a side of steamed jasmine rice.
