Spicy Thai Seafood Curry

Ingredients:

  • 2 tbsp Vegetable oil
  • 3 pieces Garlic cloves
  • 3 tbsp Thai red curry paste
  • 400 ml Coconut milk
  • 1 tbsp Fish sauce
  • 1 tbsp Brown sugar
  • 1 piece Lime, juiced
  • 500 grams Mixed seafood
  • 2 pieces Red chili peppers
  • 1 handful N/A Fresh basil

Instructions:

  1. Heat the oil in a large pan over medium heat. Add the garlic and stir for a minute.
  2. Add the Thai red curry paste and stir until well combined with the garlic.
  3. Add the coconut milk, fish sauce, brown sugar and lime juice. Stir until the ingredients are well incorporated. Bring to a boil.
  4. Add the mixed seafood and chopped red chili peppers to the pan. Reduce the heat to low, cover, and simmer for about 15 minutes.
  5. Just before serving, stir in the fresh basil. Serve the curry hot with steamed jasmine rice.
