
Spicy Thai Seafood Curry

Ingredients:
- 2 tbsp Vegetable oil
- 3 pieces Garlic cloves
- 3 tbsp Thai red curry paste
- 400 ml Coconut milk
- 1 tbsp Fish sauce
- 1 tbsp Brown sugar
- 1 piece Lime, juiced
- 500 grams Mixed seafood
- 2 pieces Red chili peppers
- 1 handful N/A Fresh basil
Instructions:
- Heat the oil in a large pan over medium heat. Add the garlic and stir for a minute.
- Add the Thai red curry paste and stir until well combined with the garlic.
- Add the coconut milk, fish sauce, brown sugar and lime juice. Stir until the ingredients are well incorporated. Bring to a boil.
- Add the mixed seafood and chopped red chili peppers to the pan. Reduce the heat to low, cover, and simmer for about 15 minutes.
- Just before serving, stir in the fresh basil. Serve the curry hot with steamed jasmine rice.
