Spicy Thai Scrambled Eggs

Ingredients:

  • 4 whole Eggs
  • 2 cloves Garlic
  • 2 stalks Green onion
  • 1 whole Red chili pepper
  • 1 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 2 tablespoons Olive oil
  • to taste Black pepper

Instructions:

  1. Crack the eggs into a bowl, beat until well mixed. Add a dash of black pepper, set aside.
  2. Finely chop the garlic, green onion and red chili pepper. Remove the seeds from the chili if you prefer less heat.
  3. Heat the oil in a pan over medium heat, add the chopped garlic and chili, cook until fragrant.
  4. Pour in the beaten eggs. Let them sit for a moment to cook at the bottom, then start stirring to form large curds. Continue to stir until the eggs are fully cooked, but still soft and a little bit runny.
  5. Drizzle with fish sauce and soy sauce, lightly stir to mix. Taste test and adjust as necessary. Then add green onions and give it a final stir.
  6. Serve the scrambled eggs hot. Enjoy your spicy Thai scrambled eggs!
