
Spicy Thai Scrambled Eggs

Ingredients:
- 4 whole Eggs
- 2 cloves Garlic
- 2 stalks Green onion
- 1 whole Red chili pepper
- 1 tablespoon Fish sauce
- 1 tablespoon Soy sauce
- 2 tablespoons Olive oil
- to taste Black pepper
Instructions:
- Crack the eggs into a bowl, beat until well mixed. Add a dash of black pepper, set aside.
- Finely chop the garlic, green onion and red chili pepper. Remove the seeds from the chili if you prefer less heat.
- Heat the oil in a pan over medium heat, add the chopped garlic and chili, cook until fragrant.
- Pour in the beaten eggs. Let them sit for a moment to cook at the bottom, then start stirring to form large curds. Continue to stir until the eggs are fully cooked, but still soft and a little bit runny.
- Drizzle with fish sauce and soy sauce, lightly stir to mix. Taste test and adjust as necessary. Then add green onions and give it a final stir.
- Serve the scrambled eggs hot. Enjoy your spicy Thai scrambled eggs!
