Spicy Thai Pork Satay

Total Time: 35 minutes + marination time
Ingredients:
- 1 pound Pork loin, cut into 1 inch cubes
- 1 stalk Lemongrass
- 2 Garlic cloves
- 1 inch piece Fresh ginger
- 2 tablespoons Soy sauce
- 2 teaspoons Fish sauce
- 1 tablespoon Brown sugar
- 1 teaspoon Ground turmeric
- 1 teaspoon Ground cayenne
- 2 tablespoons Peanut oil
Instructions:
- Mix together the lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, turmeric, and cayenne in a blender. Blend until smooth.
- Add the pork cubes to a large bowl and pour over the marinade. Stir well to ensure all pieces are covered. Cover the bowl and refrigerate for at least 4 hours, or overnight if possible.
- Preheat a grill or broiler on medium-high. Thread the pork cubes onto skewers and brush lightly with peanut oil.
- Grill the skewers, turning regularly, for 15 minutes or until the pork is cooked through and lightly charred.
- Serve immediately, with a side of peanut sauce or sweet chilli sauce.
