Spicy Thai Pork Satay

Total Time: 35 minutes + marination time

Ingredients:

  • 1 pound Pork loin, cut into 1 inch cubes
  • 1 stalk Lemongrass
  • 2 Garlic cloves
  • 1 inch piece Fresh ginger
  • 2 tablespoons Soy sauce
  • 2 teaspoons Fish sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cayenne
  • 2 tablespoons Peanut oil

Instructions:

  1. Mix together the lemongrass, garlic, ginger, soy sauce, fish sauce, brown sugar, turmeric, and cayenne in a blender. Blend until smooth.
  2. Add the pork cubes to a large bowl and pour over the marinade. Stir well to ensure all pieces are covered. Cover the bowl and refrigerate for at least 4 hours, or overnight if possible.
  3. Preheat a grill or broiler on medium-high. Thread the pork cubes onto skewers and brush lightly with peanut oil.
  4. Grill the skewers, turning regularly, for 15 minutes or until the pork is cooked through and lightly charred.
  5. Serve immediately, with a side of peanut sauce or sweet chilli sauce.
