
Spicy Thai Pineapple Fried Rice

Ingredients:
- 3 cups Cooked and cooled jasmine rice
- 1 cup Pineapple chunks
- 1 cup Diced red bell pepper
- 1 cup Carrots, thin sliced
- 1 cup Frozen peas
- 2 Eggs, beaten
- 2 tbsp Thai red curry paste
- 2 tbsp Oil
- 2 tbsp Light soy sauce
- 3 Sliced scallions
- 1 handful Chopped cashews
- 4 Lime wedges
Instructions:
- Heat 1 tablespoon of oil in a large pan over medium heat. Add the beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.
- In the same pan, add another tablespoon of oil along with the Thai red curry paste. Stir it around until it's mixed into the oil.
- Add the carrots, peas, and bell pepper into the same pan. Cook until they are slightly softened, which should take about 3-4 minutes.
- Now, add the cooked rice into the pan. Stir everything together, making sure the curry paste is well-distributed throughout the rice and vegetables.
- Add the light soy sauce and continue stirring. Then, throw in the pineapple chunks, scrambled eggs, and most of the scallions. Mix everything together.
- Serve the rice in bowls or hollowed out pineapple halves. Top with the remaining scallions, some chopped cashews, and a lime wedge on the side for squeezing.
