Spicy Thai Pineapple Fried Rice

Ingredients:

  • 3 cups Cooked and cooled jasmine rice
  • 1 cup Pineapple chunks
  • 1 cup Diced red bell pepper
  • 1 cup Carrots, thin sliced
  • 1 cup Frozen peas
  • 2 Eggs, beaten
  • 2 tbsp Thai red curry paste
  • 2 tbsp Oil
  • 2 tbsp Light soy sauce
  • 3 Sliced scallions
  • 1 handful Chopped cashews
  • 4 Lime wedges

Instructions:

  1. Heat 1 tablespoon of oil in a large pan over medium heat. Add the beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.
  2. In the same pan, add another tablespoon of oil along with the Thai red curry paste. Stir it around until it's mixed into the oil.
  3. Add the carrots, peas, and bell pepper into the same pan. Cook until they are slightly softened, which should take about 3-4 minutes.
  4. Now, add the cooked rice into the pan. Stir everything together, making sure the curry paste is well-distributed throughout the rice and vegetables.
  5. Add the light soy sauce and continue stirring. Then, throw in the pineapple chunks, scrambled eggs, and most of the scallions. Mix everything together.
  6. Serve the rice in bowls or hollowed out pineapple halves. Top with the remaining scallions, some chopped cashews, and a lime wedge on the side for squeezing.
