Spicy Thai Pasta Stir Fry

Ingredients:

  • 6 cloves garlic
  • 2 tablespoons canola oil
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 medium onion
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon crushed red pepper flakes
  • 8 ounces cooked pasta
  • 1/2 cup basil leaves
  • 2 tablespoons peanut butter

Instructions:

  1. In a large frying pan, heat oil over medium heat. Add the finely chopped garlic and sauté until it turns golden.
  2. Add chopped bell peppers and onion and cook until they soften.
  3. In a separate bowl, mix together soy sauce, brown sugar, crushed red pepper flakes, and peanut butter.
  4. Pour this sauce into the pan with vegetables, stirring until well-coated.
  5. Add the cooked pasta to the pan, and toss well to combine with the sauce and vegetables.
  6. Finally, stir in the basil leaves, and cook for another 2 minutes until they wilt.
  7. Transfer the spicy Thai pasta stir fry to serving plates and serve immediately.
