Spicy Thai Pasta

Ingredients:

  • 500 grams Pasta
  • 1 whole Red bell pepper
  • 8 cloves Garlic
  • 150 ml Soy sauce
  • 1 bunch Cilantro
  • 2 teaspoons Chili flakes
  • 100 grams Peanuts
  • 2 tablespoons Olive oil
  • 1 whole Lime

Instructions:

  1. Cook pasta according to packet instructions in a large pot of boiling salted water. Reserve some pasta water, then drain.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat. Add garlic and red bell pepper, sauté until softened.
  3. Add soy sauce and chili flakes to the pan. Stir well, and simmer for a few minutes.
  4. Combine drained pasta and sauce, adding reserved pasta water if needed. Stir well until pasta is well coated.
  5. Squeeze the lime over the pasta, and sprinkle with chopped cilantro and peanuts. Serve immediately.
