Ingredients:

  • 2 whole ripe mangos
  • 1 whole Thai bird chili peppers
  • 0.5 cup fresh cilantro
  • 0.25 cup unsalted roasted cashews
  • 0.5 whole small red onion
  • 3 tablespoon fresh lime juice
  • 2 tablespoon fish sauce
  • 1 teaspoon sugar

Instructions:

  1. Peel and thinly slice the mangos. Remove the seed.
  2. Finely chop the Thai bird chili, onion, and cilantro. Be careful when handling the chili. Its spiciness can irritate your skin and eyes.
  3. In a small bowl, whisk together the lime juice, fish sauce, and sugar.
  4. In a large bowl, combine the sliced mango, chili, onion, and cilantro.
  5. Pour the sauce over the ingredients and toss to combine.
  6. Top the salad with the roasted cashews just before serving.
