Ingredients:
- 2 whole ripe mangos
- 1 whole Thai bird chili peppers
- 0.5 cup fresh cilantro
- 0.25 cup unsalted roasted cashews
- 0.5 whole small red onion
- 3 tablespoon fresh lime juice
- 2 tablespoon fish sauce
- 1 teaspoon sugar
Instructions:
- Peel and thinly slice the mangos. Remove the seed.
- Finely chop the Thai bird chili, onion, and cilantro. Be careful when handling the chili. Its spiciness can irritate your skin and eyes.
- In a small bowl, whisk together the lime juice, fish sauce, and sugar.
- In a large bowl, combine the sliced mango, chili, onion, and cilantro.
- Pour the sauce over the ingredients and toss to combine.
- Top the salad with the roasted cashews just before serving.
