Spicy Thai Fried Rice

Ingredients:

  • 3 cups Jasmine rice
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic
  • 2 whole Red Thai chilies
  • 1 whole White onion
  • 3 tablespoons Soy sauce
  • 2 tablespoons Fish sauce
  • 2 stalks Green onions
  • To Garnish Cilantro leaves
  • 2 whole Eggs
  • 1 teaspoon Sugar
  • To Taste Ground white pepper

Instructions:

  1. Cook the jasmine rice according to package instructions and set it aside.
  2. Heat vegetable oil in a large pan over medium-high heat.
  3. Add the garlic and Thai chilies to the pan and fry until fragrant.
  4. Add the onions to the pan and sauté until they become translucent.
  5. Push the garlic, chilies, and onions to one side of the pan and crack the eggs into the other side. Scramble the eggs and mix with the vegetables.
  6. Add the cooked rice to the pan and break up any clumps.
  7. Season with soy sauce, fish sauce, sugar, and white pepper.
  8. Stir everything together to combine and continue to cook for 2-3 minutes.
  9. Turn off the heat and stir in the green onions.
  10. Garnish with cilantro leaves and serve hot.
