
Spicy Thai Fried Rice

Ingredients:
- 3 cups Jasmine rice
- 2 tablespoons Vegetable oil
- 3 cloves Garlic
- 2 whole Red Thai chilies
- 1 whole White onion
- 3 tablespoons Soy sauce
- 2 tablespoons Fish sauce
- 2 stalks Green onions
- To Garnish Cilantro leaves
- 2 whole Eggs
- 1 teaspoon Sugar
- To Taste Ground white pepper
Instructions:
- Cook the jasmine rice according to package instructions and set it aside.
- Heat vegetable oil in a large pan over medium-high heat.
- Add the garlic and Thai chilies to the pan and fry until fragrant.
- Add the onions to the pan and sauté until they become translucent.
- Push the garlic, chilies, and onions to one side of the pan and crack the eggs into the other side. Scramble the eggs and mix with the vegetables.
- Add the cooked rice to the pan and break up any clumps.
- Season with soy sauce, fish sauce, sugar, and white pepper.
- Stir everything together to combine and continue to cook for 2-3 minutes.
- Turn off the heat and stir in the green onions.
- Garnish with cilantro leaves and serve hot.
