
Spicy Thai Fish Curry for Breakfast

Ingredients:
- 4 pieces Fish fillets
- 2 tablespoons Red curry paste
- 400 ml Coconut milk
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 2 pieces Fresh red chili
- 1 handful Thai basil leaves
- 2 tablespoons Vegetable oil
- 2 pieces Garlic cloves
- 1 piece Lime
Instructions:
- Heat the vegetable oil in a large saucepan over medium heat.
- Add the garlic and saute until golden brown.
- Add the red curry paste and cook for 2-3 minutes until fragrant.
- Add the coconut milk, fish sauce, brown sugar, and sliced chilies. Stir well and bring to a boil.
- Add the fish fillets and simmer until the fish is cooked through, about 10-15 minutes.
- Stir in the Thai basil leaves and remove from heat.
- Serve the curry topped with additional basil leaves and a squeeze of fresh lime juice.
