Spicy Thai Fish Curry for Breakfast

Ingredients:

  • 4 pieces Fish fillets
  • 2 tablespoons Red curry paste
  • 400 ml Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 2 pieces Fresh red chili
  • 1 handful Thai basil leaves
  • 2 tablespoons Vegetable oil
  • 2 pieces Garlic cloves
  • 1 piece Lime

Instructions:

  1. Heat the vegetable oil in a large saucepan over medium heat.
  2. Add the garlic and saute until golden brown.
  3. Add the red curry paste and cook for 2-3 minutes until fragrant.
  4. Add the coconut milk, fish sauce, brown sugar, and sliced chilies. Stir well and bring to a boil.
  5. Add the fish fillets and simmer until the fish is cooked through, about 10-15 minutes.
  6. Stir in the Thai basil leaves and remove from heat.
  7. Serve the curry topped with additional basil leaves and a squeeze of fresh lime juice.
