
Spicy Thai Egg Stir Fry

Ingredients:
- 8 Eggs
- 2 tablespoons Vegetable Oil
- 3 cloves Garlic
- 2 Red Chilli
- 3 Green onions
- 2 tablespoons Soy Sauce
- 1 tablespoon Fish Sauce
- 1 tablespoon Sugar
- 0.5 cup Basil Leaves
- to taste Pepper
Instructions:
- Beat the eggs in a bowl and set them aside.
- In a wok or large skillet, heat the oil over medium heat.
- Add the garlic and chillies, sauté until fragrant.
- Pour the eggs into the wok. Let them cook without stirring until they start to set around the edges.
- Start to stir the eggs, breaking them into large pieces. Continue to cook until they're done to your liking.
- Add the green onions, soy sauce, fish sauce, and sugar. Stir everything together and cook for another minute.
- Add the basil leaves and stir until they're wilted. Season with pepper as needed.
- Serve the stir fry hot over rice if desired.
