Spicy Thai Egg Stir Fry

Ingredients:

  • 8 Eggs
  • 2 tablespoons Vegetable Oil
  • 3 cloves Garlic
  • 2 Red Chilli
  • 3 Green onions
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Sugar
  • 0.5 cup Basil Leaves
  • to taste Pepper

Instructions:

  1. Beat the eggs in a bowl and set them aside.
  2. In a wok or large skillet, heat the oil over medium heat.
  3. Add the garlic and chillies, sauté until fragrant.
  4. Pour the eggs into the wok. Let them cook without stirring until they start to set around the edges.
  5. Start to stir the eggs, breaking them into large pieces. Continue to cook until they're done to your liking.
  6. Add the green onions, soy sauce, fish sauce, and sugar. Stir everything together and cook for another minute.
  7. Add the basil leaves and stir until they're wilted. Season with pepper as needed.
  8. Serve the stir fry hot over rice if desired.
