Spicy Thai Chicken Stir Fry

Ingredients:

  • 2 pieces Chicken breasts
  • 1 piece Red bell pepper
  • 1 piece Onion
  • 2 pieces Garlic cloves
  • 2 tablespoons Thai red curry paste
  • 1/2 cup Coconut milk
  • 1/2 tablespoon Fish sauce
  • 1/2 tablespoon Brown sugar
  • 2 tablespoons Vegetable oil
  • 1/2 cup Fresh basil leaves
  • to taste Salt

Instructions:

  1. Cut the chicken into thin slices, chop the onion, red bell pepper and garlic.
  2. Heat the vegetable oil in a large pan over medium-high heat.
  3. Add the onions and garlic to the pan and cook until the onion is translucent.
  4. Add the chicken to the pan and cook until it is fully cooked.
  5. Add the Thai red curry paste to the pan and stir until the chicken is well coated.
  6. Stir in the coconut milk, fish sauce, and brown sugar. Bring the mixture to a simmer.
  7. Add the bell pepper and let it cook for a couple of minutes until it is tender.
  8. Turn off the heat and stir in the fresh basil leaves.
  9. Season with salt to taste and serve hot with jasmine rice or noodles.
