
Spicy Thai Chicken Stir Fry

Ingredients:
- 2 pieces Chicken breasts
- 1 piece Red bell pepper
- 1 piece Onion
- 2 pieces Garlic cloves
- 2 tablespoons Thai red curry paste
- 1/2 cup Coconut milk
- 1/2 tablespoon Fish sauce
- 1/2 tablespoon Brown sugar
- 2 tablespoons Vegetable oil
- 1/2 cup Fresh basil leaves
- to taste Salt
Instructions:
- Cut the chicken into thin slices, chop the onion, red bell pepper and garlic.
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the onions and garlic to the pan and cook until the onion is translucent.
- Add the chicken to the pan and cook until it is fully cooked.
- Add the Thai red curry paste to the pan and stir until the chicken is well coated.
- Stir in the coconut milk, fish sauce, and brown sugar. Bring the mixture to a simmer.
- Add the bell pepper and let it cook for a couple of minutes until it is tender.
- Turn off the heat and stir in the fresh basil leaves.
- Season with salt to taste and serve hot with jasmine rice or noodles.
