Spicy Thai Chicken Satay

Ingredients:

  • 4 Boneless Chicken Breasts
  • 2 stalks Lemongrass
  • 3 Garlic Cloves
  • 2 Red Chili Peppers
  • 2 tbsp Fish Sauce
  • 1 tbsp Brown Sugar
  • 1/2 cup Coconut Milk
  • 1/2 cup Peanut Sauce
  • 8 pcs Wooden Skewers

Instructions:

  1. Soak wooden skewers in water for 15 minutes to prevent burning.
  2. Cut the chicken into thin strips and set aside.
  3. Process the lemongrass, garlic, chilies, fish sauce, brown sugar, and half of the coconut milk in a blender until smooth to create the marinade.
  4. Marinate the chicken strips in the mixture for at least 15 minutes.
  5. Heat a grill or dip pan on medium heat.
  6. Thread the chicken onto the soaked skewers.
  7. Grill the skewers, regularly turning and basting with remaining coconut milk, until chicken is fully cooked.
  8. Serve the satay with peanut sauce for dipping.
