
Spicy Thai Chicken Satay

Ingredients:
- 4 Boneless Chicken Breasts
- 2 stalks Lemongrass
- 3 Garlic Cloves
- 2 Red Chili Peppers
- 2 tbsp Fish Sauce
- 1 tbsp Brown Sugar
- 1/2 cup Coconut Milk
- 1/2 cup Peanut Sauce
- 8 pcs Wooden Skewers
Instructions:
- Soak wooden skewers in water for 15 minutes to prevent burning.
- Cut the chicken into thin strips and set aside.
- Process the lemongrass, garlic, chilies, fish sauce, brown sugar, and half of the coconut milk in a blender until smooth to create the marinade.
- Marinate the chicken strips in the mixture for at least 15 minutes.
- Heat a grill or dip pan on medium heat.
- Thread the chicken onto the soaked skewers.
- Grill the skewers, regularly turning and basting with remaining coconut milk, until chicken is fully cooked.
- Serve the satay with peanut sauce for dipping.
