
Spicy Thai Breakfast Noodles

Ingredients:
- 200 grams Pasta Noodles
- 2 tablespoons Olive Oil
- 4 cloves Garlic
- 2 pieces Red Chili Peppers
- 200 grams Shrimp
- 1 bunch Scallions
- 4 pieces Eggs
- 2 tablespoons Light soy sauce
- 100 grams Firm tofu
- 1 cup Bean sprouts
- 1 piece Lime
- 1 handful Peanuts
Instructions:
- Cook the pasta noodles as per package instructions.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and chili peppers and stir fry for a minute until fragrant.
- Add the shrimp and cook until they turn pink. Remove shrimp and set aside.
- In the same skillet, scramble the eggs and cook until just set. Remove from the skillet.
- Add scallions, soy sauce, tofu, and cooked pasta to the skillet. Stir well to combine.
- Return the shrimp and eggs to the skillet and mix well. Cook for another 2-3 minutes.
- Serve the noodles in bowls, garnished with bean sprouts, a squeeze of lime, and a sprinkling of peanuts. Enjoy your spicy Thai breakfast noodles!
