Spicy Thai Breakfast Noodles

Ingredients:

  • 200 grams Pasta Noodles
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic
  • 2 pieces Red Chili Peppers
  • 200 grams Shrimp
  • 1 bunch Scallions
  • 4 pieces Eggs
  • 2 tablespoons Light soy sauce
  • 100 grams Firm tofu
  • 1 cup Bean sprouts
  • 1 piece Lime
  • 1 handful Peanuts

Instructions:

  1. Cook the pasta noodles as per package instructions.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and chili peppers and stir fry for a minute until fragrant.
  3. Add the shrimp and cook until they turn pink. Remove shrimp and set aside.
  4. In the same skillet, scramble the eggs and cook until just set. Remove from the skillet.
  5. Add scallions, soy sauce, tofu, and cooked pasta to the skillet. Stir well to combine.
  6. Return the shrimp and eggs to the skillet and mix well. Cook for another 2-3 minutes.
  7. Serve the noodles in bowls, garnished with bean sprouts, a squeeze of lime, and a sprinkling of peanuts. Enjoy your spicy Thai breakfast noodles!
