
Spicy Thai Breakfast Fried Rice

Ingredients:
- 1 cup Jasmine Rice
- 2 cups Water
- 2 tablespoons Vegetable Oil
- 3 cloves Garlic
- 2 Thai Chilies
- 2 Eggs
- 1 cup Frozen Peas and Carrots
- 2 stalks Green Onions
- 2 tablespoons Soy Sauce
- 1 tablespoon Fish Sauce
- 1 teaspoon Sugar
- 2 Lime Wedges
Instructions:
- Rinse the jasmine rice several times until the water runs clear. Bring a pot of water to a boil. Add rice and cook until the rice is tender, about 15-20 minutes. Drain and set aside.
- In a large non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the minced garlic and Thai chilies. Saute briefly until fragrant, about 1 minute.
- Crack the eggs into the pan and quickly scramble them. Once the eggs are almost fully cooked, add in the cooked rice. Stir to combine
- Add the frozen peas and carrots, chopped green onions, soy sauce, fish sauce, and sugar. Stir to combine. Cook for another 3-5 minutes, until the vegetables are warmed through.
- Serve the spicy fried rice with a couple of lime wedges. Squeeze the lime juice over the top of the rice just before eating. Enjoy hot.
