Spicy Thai Breakfast Fried Rice

Ingredients:

  • 1 cup Jasmine Rice
  • 2 cups Water
  • 2 tablespoons Vegetable Oil
  • 3 cloves Garlic
  • 2 Thai Chilies
  • 2 Eggs
  • 1 cup Frozen Peas and Carrots
  • 2 stalks Green Onions
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 2 Lime Wedges

Instructions:

  1. Rinse the jasmine rice several times until the water runs clear. Bring a pot of water to a boil. Add rice and cook until the rice is tender, about 15-20 minutes. Drain and set aside.
  2. In a large non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the minced garlic and Thai chilies. Saute briefly until fragrant, about 1 minute.
  3. Crack the eggs into the pan and quickly scramble them. Once the eggs are almost fully cooked, add in the cooked rice. Stir to combine
  4. Add the frozen peas and carrots, chopped green onions, soy sauce, fish sauce, and sugar. Stir to combine. Cook for another 3-5 minutes, until the vegetables are warmed through.
  5. Serve the spicy fried rice with a couple of lime wedges. Squeeze the lime juice over the top of the rice just before eating. Enjoy hot.
