Spicy Thai Breakfast Chicken Stir Fry

Ingredients:

  • 2 pieces Boneless chicken breasts
  • 3 cloves Garlic cloves
  • 4 chilies Red Thai chilies
  • 1 piece Green bell pepper
  • 1 piece Red bell pepper
  • 1 piece Yellow onion
  • 3 tablespoons Soy sauce
  • 2 tablespoons Fish sauce
  • 2 tablespoons Olive oil
  • 1 handful Basil leaves

Instructions:

  1. Cut the chicken breasts into small pieces. Chop up the garlic, Thai chilies, bell peppers, and onion.
  2. Heat the olive oil in a wok or large pan. Add the garlic and Thai chilies and stir for 1 minute.
  3. Add the chicken pieces to the wok, stirring regularly for about 5 minutes or until the chicken is cooked.
  4. Add the soy sauce and fish sauce to the wok, ensuring all the chicken pieces are coated. Stir in the chopped bell peppers and onion, sautéing for 3-4 minutes.
  5. Turn off the heat, then add the basil leaves and mix well till they wilt in the heat from the cooking. Adjust seasoning if necessary.
  6. Serve the Spicy Thai Breakfast Chicken Stir Fry with some hot jasmine rice or enjoy it as is!
