
Spicy Thai Breakfast Chicken Stir Fry

Ingredients:
- 2 pieces Boneless chicken breasts
- 3 cloves Garlic cloves
- 4 chilies Red Thai chilies
- 1 piece Green bell pepper
- 1 piece Red bell pepper
- 1 piece Yellow onion
- 3 tablespoons Soy sauce
- 2 tablespoons Fish sauce
- 2 tablespoons Olive oil
- 1 handful Basil leaves
Instructions:
- Cut the chicken breasts into small pieces. Chop up the garlic, Thai chilies, bell peppers, and onion.
- Heat the olive oil in a wok or large pan. Add the garlic and Thai chilies and stir for 1 minute.
- Add the chicken pieces to the wok, stirring regularly for about 5 minutes or until the chicken is cooked.
- Add the soy sauce and fish sauce to the wok, ensuring all the chicken pieces are coated. Stir in the chopped bell peppers and onion, sautéing for 3-4 minutes.
- Turn off the heat, then add the basil leaves and mix well till they wilt in the heat from the cooking. Adjust seasoning if necessary.
- Serve the Spicy Thai Breakfast Chicken Stir Fry with some hot jasmine rice or enjoy it as is!
