Spicy Thai Beef Noodle Soup

Ingredients:
- 1 pound Beef brisket
- 200 grams Rice noodles
- 4 cloves Garlic
- 3 Red chillies
- 2 stalks Lemongrass
- 2 tablespoons Fish sauce
- 2 tablespoons Lime juice
- 4 Spring onions
- handful Fresh coriander leaves
- handful Bean sprouts
- 1.5 liters Stock
- 1 tablespoon Oil
Instructions:
- Prepare the beef brisket by cutting it into thin slices. Set aside.
- Prepare the stock by boiling it in a large pot.
- As the stock is heating, prepare your other ingredients. Crush the garlic, chop the chillies, spring onions and coriander, and slice the lemongrass into thin rounds.
- Heat the oil in a pan over medium heat. Add the garlic and chillies, stirring until fragrant.
- Add the beef into the pan and stir-fry until it's browned on all sides.
- Add the browned beef, lemongrass, and fish sauce into the stock. Bring to a simmer and let it cook for around 45-50 minutes.
- While the soup is simmering, cook the rice noodles according to the package instructions.
- After the soup has simmered, add the lime juice, and season with salt and pepper to taste.
- To serve, divide the noodles among four bowls, ladle the soup over the noodles, and top with spring onions, coriander and bean sprouts.
