Spicy Thai Beef Noodle Soup

Ingredients:

  • 1 pound Beef brisket
  • 200 grams Rice noodles
  • 4 cloves Garlic
  • 3 Red chillies
  • 2 stalks Lemongrass
  • 2 tablespoons Fish sauce
  • 2 tablespoons Lime juice
  • 4 Spring onions
  • handful Fresh coriander leaves
  • handful Bean sprouts
  • 1.5 liters Stock
  • 1 tablespoon Oil

Instructions:

  1. Prepare the beef brisket by cutting it into thin slices. Set aside.
  2. Prepare the stock by boiling it in a large pot.
  3. As the stock is heating, prepare your other ingredients. Crush the garlic, chop the chillies, spring onions and coriander, and slice the lemongrass into thin rounds.
  4. Heat the oil in a pan over medium heat. Add the garlic and chillies, stirring until fragrant.
  5. Add the beef into the pan and stir-fry until it's browned on all sides.
  6. Add the browned beef, lemongrass, and fish sauce into the stock. Bring to a simmer and let it cook for around 45-50 minutes.
  7. While the soup is simmering, cook the rice noodles according to the package instructions.
  8. After the soup has simmered, add the lime juice, and season with salt and pepper to taste.
  9. To serve, divide the noodles among four bowls, ladle the soup over the noodles, and top with spring onions, coriander and bean sprouts.
