Spicy Teriyaki Chicken Bowl

Ingredients:

  • 4 Boneless chicken thighs
  • 1/3 cup Soy sauce
  • 1/3 cup Brown sugar
  • 1/4 cup Mirin
  • 2 tablespoons Sesame oil
  • 1 tablespoon Ginger, grated
  • 3 cloves Garlic, minced
  • 1/2 teaspoon Red pepper flakes
  • 4 cups Cooked white rice
  • 4 Scallions, chopped
  • 1 tablespoon Sesame seeds

Instructions:

  1. In a medium mixing bowl, combine the soy sauce, brown sugar, mirin, sesame oil, grated ginger, minced garlic, and red pepper flakes. Stir well until the sugar is fully dissolved.
  2. Place the chicken thighs in the bowl and let them marinate in the fridge for at least an hour, preferably overnight.
  3. Heat a large frying pan over medium heat. Remove the chicken from the marinade, reserving the marinade. Cook the chicken on each side for about 5 minutes until cooked through and slightly caramelized.
  4. Bring the reserved marinade to a boil in a small pot over high heat. Lower the heat and let it simmer until the sauce has reduced and thickened.
  5. Serve the chicken over the cooked rice, drizzle with the thickened teriyaki sauce. Top with chopped scallions and sesame seeds. Enjoy your spicy teriyaki chicken bowl!
