Total Time: 35 minutes
Ingredients:
- 4 Boneless chicken thighs
- 1/3 cup Soy sauce
- 1/3 cup Brown sugar
- 1/4 cup Mirin
- 2 tablespoons Sesame oil
- 1 tablespoon Ginger, grated
- 3 cloves Garlic, minced
- 1/2 teaspoon Red pepper flakes
- 4 cups Cooked white rice
- 4 Scallions, chopped
- 1 tablespoon Sesame seeds
Instructions:
- In a medium mixing bowl, combine the soy sauce, brown sugar, mirin, sesame oil, grated ginger, minced garlic, and red pepper flakes. Stir well until the sugar is fully dissolved.
- Place the chicken thighs in the bowl and let them marinate in the fridge for at least an hour, preferably overnight.
- Heat a large frying pan over medium heat. Remove the chicken from the marinade, reserving the marinade. Cook the chicken on each side for about 5 minutes until cooked through and slightly caramelized.
- Bring the reserved marinade to a boil in a small pot over high heat. Lower the heat and let it simmer until the sauce has reduced and thickened.
- Serve the chicken over the cooked rice, drizzle with the thickened teriyaki sauce. Top with chopped scallions and sesame seeds. Enjoy your spicy teriyaki chicken bowl!
