Spicy Tamagoyaki (Japanese Rolled Omelette)

Ingredients:

  • 4 items Eggs
  • 1 tbsp Soy Sauce
  • 1 tbsp Sugar
  • 1 tbsp Mirin
  • To Taste Shichimi Togarashi (Japanese Seven Spice)
  • 1 tbsp Vegetable Oil

Instructions:

  1. In a bowl, beat the eggs and mix in the soy sauce, sugar, mirin, and Shichimi Togarashi.
  2. Heat the vegetable oil in a tamagoyaki pan (or regular non-stick pan) over medium heat.
  3. Pour a thin layer of the egg mixture into the pan and spread it evenly. When the egg begins to solidify, roll it towards one end of the pan.
  4. Pour another thin layer of the egg mixture into the pan, lifting the previously rolled egg to let the mixture spread underneath. Once it begins to solidify, roll it again, incorporating the previous roll into the new layer.
  5. Repeat this process until all of the egg mixture has been used.
  6. Allow the tamagoyaki to cool slightly, then cut into bite-sized pieces and serve warm. Adjust the spice level to taste with additional Shichimi Togarashi, if desired.
