
Spicy Szechuan Tofu Stir-Fry

Ingredients:
- 1 block Firm tofu
- 2 teaspoons Szechuan peppercorns
- 6-8 Dried red chilies
- 3 tablespoons Vegetable oil
- 3 cloves minced Garlic
- 1 inch grated Ginger
- 5 sliced Green onions
- 2 tablespoons Soya Sauce
- 1 tablespoon Rice Vinegar
Instructions:
- Press the tofu block under a weighted cutting board for 15 minutes to drain excess water. Cut into bite-sized cubes.
- Heat the vegetable oil in a wok or large frying pan over medium heat.
- Add the Szechuan peppercorns and dried red chilies. Fry for 1-2 minutes until fragrant.
- Add the minced garlic and grated ginger to the pan. Fry for another minute.
- Increase the heat to high and add the tofu cubes to the pan. Stir-fry for 5-7 minutes until golden and crispy.
- Add the soya sauce and rice vinegar, reduce the heat to low and stir well to coat all tofu pieces. Cook for another 2-3 minutes.
