
Spicy Szechuan Stir-Fried Vegetables

Ingredients:
- 2 cups Broccoli Florets
- 2 medium Carrots
- 1 Red Bell Pepper
- 1 can Baby Corn
- 3/4 cup Szechuan Sauce
- 2 tsp Sesame oil
- 2 Garlic cloves
- to taste Chili Flakes
- to taste Salt
Instructions:
- 1. Prep your vegetables: chop the broccoli into florets, peel and chop the carrots, de-seed and slice the red bell pepper, and drain the can of baby corn.
- 2. Heat the sesame oil in a large wok or sauté pan over medium-high heat.
- 3. When the oil is hot, add in the garlic and chili flakes, cooking for about 30 seconds or until the garlic is fragrant.
- 4. Add in the prepared vegetables and stir-fry for about 5-7 minutes or until tender crisp.
- 5. Pour the Szechuan sauce over the vegetables and stir well to coat. Season with salt to taste.
- 6. Continue cooking for another 2-3 minutes, allowing the sauce to heat through and the flavors to blend.
- 7. Serve hot over rice or noodles, garnished with additional chili flakes if desired.
