Spicy Szechuan Stir-Fried Vegetables

Ingredients:

  • 2 cups Broccoli Florets
  • 2 medium Carrots
  • 1 Red Bell Pepper
  • 1 can Baby Corn
  • 3/4 cup Szechuan Sauce
  • 2 tsp Sesame oil
  • 2 Garlic cloves
  • to taste Chili Flakes
  • to taste Salt

Instructions:

  1. 1. Prep your vegetables: chop the broccoli into florets, peel and chop the carrots, de-seed and slice the red bell pepper, and drain the can of baby corn.
  2. 2. Heat the sesame oil in a large wok or sauté pan over medium-high heat.
  3. 3. When the oil is hot, add in the garlic and chili flakes, cooking for about 30 seconds or until the garlic is fragrant.
  4. 4. Add in the prepared vegetables and stir-fry for about 5-7 minutes or until tender crisp.
  5. 5. Pour the Szechuan sauce over the vegetables and stir well to coat. Season with salt to taste.
  6. 6. Continue cooking for another 2-3 minutes, allowing the sauce to heat through and the flavors to blend.
  7. 7. Serve hot over rice or noodles, garnished with additional chili flakes if desired.
