Spicy Szechuan Shrimp Stir-fry

Ingredients:

  • 1 pound Large shrimp
  • 3 tablespoons Szechuan chili sauce
  • 2 cloves Garlic
  • 1 inch piece Fresh ginger
  • 2 cups Mixed Vegetable (bell peppers, snow peas, bok choy)
  • 2 tablespoons Cooking oil
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 2 cups Cooked white rice

Instructions:

  1. Peel and devein the shrimp, leaving the tails on. Pat them dry and set aside.
  2. In a bowl, combine the Szechuan sauce, soy sauce, sesame oil, and cornstarch. Stir until well mixed.
  3. Finely chop the garlic and ginger, set aside.
  4. Heat the cooking oil in a wok or large frying pan over high heat. Once hot, add the garlic and ginger, stir fry for about 30 seconds until fragrant.
  5. Add the shrimp to the wok and stir-fry until they are pink and cooked through, about 2-3 minutes. Remove the shrimp from the wok and set aside.
  6. In the same wok, add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
  7. Return the shrimp to the wok, add the sauce and stir well to coat. Cook for another 2 minutes until the sauce has thickened.
  8. Serve the spicy shrimp stir-fry over the cooked rice.
