
Spicy Szechuan Shrimp Stir-fry

Ingredients:
- 1 pound Large shrimp
- 3 tablespoons Szechuan chili sauce
- 2 cloves Garlic
- 1 inch piece Fresh ginger
- 2 cups Mixed Vegetable (bell peppers, snow peas, bok choy)
- 2 tablespoons Cooking oil
- 2 tablespoons Soy sauce
- 1 teaspoon Sesame oil
- 1 teaspoon Cornstarch
- 2 cups Cooked white rice
Instructions:
- Peel and devein the shrimp, leaving the tails on. Pat them dry and set aside.
- In a bowl, combine the Szechuan sauce, soy sauce, sesame oil, and cornstarch. Stir until well mixed.
- Finely chop the garlic and ginger, set aside.
- Heat the cooking oil in a wok or large frying pan over high heat. Once hot, add the garlic and ginger, stir fry for about 30 seconds until fragrant.
- Add the shrimp to the wok and stir-fry until they are pink and cooked through, about 2-3 minutes. Remove the shrimp from the wok and set aside.
- In the same wok, add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
- Return the shrimp to the wok, add the sauce and stir well to coat. Cook for another 2 minutes until the sauce has thickened.
- Serve the spicy shrimp stir-fry over the cooked rice.
