
Spicy Szechuan Shrimp

Ingredients:
- 1 pound Large shrimp
- 1 teaspoon Szechuan peppercorns
- 8 Dry red chillies
- 2 cloves Garlic
- 1 inch piece Ginger
- 2 tablespoons Soy sauce
- 1 tablespoon Rice wine vinegar
- 1 teaspoon Sugar
- 1 teaspoon Cornstarch
- 2 tablespoons Vegetable oil
- 2 stalks Green onion
Instructions:
- Rinse the shrimp and pat dry with paper towels.
- Grind the Szechuan peppercorns into a powder.
- Combine the soy sauce, vinegar, sugar, and cornstarch in a small bowl and add two tablespoons of water. Stir until the sugar and cornstarch are fully dissolved.
- Heat the oil in a wok or large skillet over high heat. Add the peppercorns and chillies and stir fry for 30 seconds until fragrant.
- Add the garlic and ginger and stir fry for another 30 seconds.
- Add the shrimp and stir fry for 2-3 minutes until they turn pink.
- Add the sauce and continue to stir fry until the shrimp are coated and the sauce is thickened.
- Garnish with sliced green onion and serve immediately.
