Spicy Szechuan Shrimp

Ingredients:

  • 1 pound Large shrimp
  • 1 teaspoon Szechuan peppercorns
  • 8 Dry red chillies
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice wine vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Cornstarch
  • 2 tablespoons Vegetable oil
  • 2 stalks Green onion

Instructions:

  1. Rinse the shrimp and pat dry with paper towels.
  2. Grind the Szechuan peppercorns into a powder.
  3. Combine the soy sauce, vinegar, sugar, and cornstarch in a small bowl and add two tablespoons of water. Stir until the sugar and cornstarch are fully dissolved.
  4. Heat the oil in a wok or large skillet over high heat. Add the peppercorns and chillies and stir fry for 30 seconds until fragrant.
  5. Add the garlic and ginger and stir fry for another 30 seconds.
  6. Add the shrimp and stir fry for 2-3 minutes until they turn pink.
  7. Add the sauce and continue to stir fry until the shrimp are coated and the sauce is thickened.
  8. Garnish with sliced green onion and serve immediately.
