Spicy Szechuan Mixed Vegetables

Ingredients:

  • 1 cup Broccoli
  • 1 cup Carrots
  • 1 cup Bell peppers
  • 1 cup Snow peas
  • 1 cup Mushrooms
  • 2 Garlic cloves
  • 2 Red chili peppers
  • 2 tablespoons Soy sauce
  • 1 tablespoon Szechuan chili sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Cornstarch
  • 1 tablespoon Vegetable oil
  • 1 cup Water

Instructions:

  1. Prepare the vegetables by cutting them into bite-sized pieces.
  2. Heat the oil in a wok or large skillet over medium-high heat.
  3. Add the garlic and red chili peppers, stir-frying until fragrant.
  4. Add the broccoli, carrots, bell peppers, snow peas, and mushrooms to the wok. Stir-fry for about 5-7 minutes until they are crisp-tender.
  5. In a bowl, mix together the soy sauce, Szechuan chili sauce, sugar, and cornstarch. Stir in the water.
  6. Pour the sauce over the vegetables in the wok. Stir well to combine.
  7. Continue cooking for another 2-3 minutes, until the sauce has thickened.
  8. Serve the Spicy Szechuan Mixed Vegetables hot, with steamed rice if desired.
