
Spicy Szechuan Mixed Vegetables

Ingredients:
- 1 cup Broccoli
- 1 cup Carrots
- 1 cup Bell peppers
- 1 cup Snow peas
- 1 cup Mushrooms
- 2 Garlic cloves
- 2 Red chili peppers
- 2 tablespoons Soy sauce
- 1 tablespoon Szechuan chili sauce
- 1 teaspoon Sugar
- 1 teaspoon Cornstarch
- 1 tablespoon Vegetable oil
- 1 cup Water
Instructions:
- Prepare the vegetables by cutting them into bite-sized pieces.
- Heat the oil in a wok or large skillet over medium-high heat.
- Add the garlic and red chili peppers, stir-frying until fragrant.
- Add the broccoli, carrots, bell peppers, snow peas, and mushrooms to the wok. Stir-fry for about 5-7 minutes until they are crisp-tender.
- In a bowl, mix together the soy sauce, Szechuan chili sauce, sugar, and cornstarch. Stir in the water.
- Pour the sauce over the vegetables in the wok. Stir well to combine.
- Continue cooking for another 2-3 minutes, until the sauce has thickened.
- Serve the Spicy Szechuan Mixed Vegetables hot, with steamed rice if desired.
