Spicy Szechuan Fish

Ingredients:

  • 4 pieces White fish fillets
  • 1 tablespoon Szechuan peppercorns
  • 3 pieces Garlic cloves
  • 2 pieces Fresh red chili
  • 1 inch piece Ginger
  • 2 tablespoons Light soy sauce
  • 1 tablespoon Dark soy sauce
  • 2 tablespoons Chinese black vinegar
  • 1 teaspoon Sugar
  • 4 stalks Spring onions
  • 3 tablespoons Vegetable oil

Instructions:

  1. 1. Lightly toast the Szechuan peppercorns in a dry pan, then grind them into a coarse powder.
  2. 2. Finely chop the garlic, red chili, and ginger. Cut the spring onions into small rings.
  3. 3. In a bowl, mix together the ground Szechuan pepper, garlic, red chili, ginger, light soy sauce, dark soy sauce, Chinese black vinegar, and sugar till it forms a sauce.
  4. 4. In a pan, heat up the vegetable oil. Add in the fish fillets and fry each side for about 4 minutes till they're cooked through.
  5. 5. Cover the cooked fish with the prepared sauce, sprinkle over the spring onions, and cook for an additional 2 minutes.
  6. 6. Serve your Spicy Szechuan Fish while hot and enjoy your spicy Chinese snack!
