
Spicy Szechuan Fish

Ingredients:
- 4 pieces White fish fillets
- 1 tablespoon Szechuan peppercorns
- 3 pieces Garlic cloves
- 2 pieces Fresh red chili
- 1 inch piece Ginger
- 2 tablespoons Light soy sauce
- 1 tablespoon Dark soy sauce
- 2 tablespoons Chinese black vinegar
- 1 teaspoon Sugar
- 4 stalks Spring onions
- 3 tablespoons Vegetable oil
Instructions:
- 1. Lightly toast the Szechuan peppercorns in a dry pan, then grind them into a coarse powder.
- 2. Finely chop the garlic, red chili, and ginger. Cut the spring onions into small rings.
- 3. In a bowl, mix together the ground Szechuan pepper, garlic, red chili, ginger, light soy sauce, dark soy sauce, Chinese black vinegar, and sugar till it forms a sauce.
- 4. In a pan, heat up the vegetable oil. Add in the fish fillets and fry each side for about 4 minutes till they're cooked through.
- 5. Cover the cooked fish with the prepared sauce, sprinkle over the spring onions, and cook for an additional 2 minutes.
- 6. Serve your Spicy Szechuan Fish while hot and enjoy your spicy Chinese snack!
