
Spicy Szechuan Beef Stir-fry

Ingredients:
- 500 grams Beef Steak
- 2 teaspoons Szechuan Peppercorns
- 4 tablespoons Soy Sauce
- 2 tablespoons Brown Sugar
- 4 cloves Garlic
- 1 whole Red Bell Pepper
- 4 stems Scallions
- 2 tablespoons Rice Wine
- 2 teaspoons Cornstarch
- as needed Vegetable Oil
Instructions:
- Start off by slicing the beef steak into thin strips. Set these aside for now.
- Next, prepare your spicy Szechuan sauce. To do this, roast the Szechuan peppercorns in a dry pan over medium heat until they become aromatic. Then crush them into a powder. Combine this with the soy sauce and brown sugar in a bowl and stir well until the sugar has dissolved.
- Now, mince the garlic and chop the red bell pepper and scallions into thin pieces. Again, set these aside for now.
- In a separate small bowl, combine some of the rice wine with the cornstarch to create a slurry. This will be used later to help thicken our stir-fry sauce.
- Now, heat the vegetable oil in a wok or large frying pan over high heat. Add the sliced beef to this and fry until it's browned and cooked through, which should take around 5 minutes. Once done, remove the beef from the pan and set it aside for now.
- Next, in the same frying pan, add a bit more oil if needed and then add the minced garlic, chopped bell peppers, and half of the chopped scallions. Fry these until they're softened, which should take about 5 minutes.
- Now, reintroduce the cooked beef back into the pan and pour the spicy Szechuan sauce over everything. Stir well to make sure everything is evenly coated in the sauce.
- At this point, add the cornstarch slurry into the pan. This will help to thicken up the stir-fry sauce. Continue to stir everything well until the sauce has thickened to your liking.
- Once done, serve your spicy Szechuan beef stir-fry hot, garnished with the rest of the chopped scallions. Enjoy your meal!
