
Spicy Southern Fried Chicken

Ingredients:
- 4 pieces Chicken breasts
- 2 cups Buttermilk
- 2 cups All-purpose flour
- 2 tsps Cayenne pepper
- 1 tsp Salt
- 1 tsp Black pepper
- 1 tsp Garlic powder
- sufficient for frying Vegetable oil
Instructions:
- 1. Rinse the chicken breasts and pat dry.
- 2. In a bowl, combine buttermilk, 1 tsp of cayenne pepper, salt, black pepper and garlic powder. Mix until well combined. Add the chicken breasts and marinate for at least 2 hours (or overnight for best results).
- 3. In another bowl, combine the flour with the remaining tsp of cayenne pepper. Mix well.
- 4. Heat the vegetable oil in a deep skillet or fryer to about 350ºF (175ºC).
- 5. Remove the chicken breasts from the buttermilk marinade, allowing the excess to drip off. Dredge the chicken in the flour mixture, shaking off the excess.
- 6. Fry the chicken breasts, a few pieces at a time, until golden brown and crispy, about 10-12 minutes. Make sure the chicken is fully cooked, reaching an internal temperature of 165ºF (74ºC).
- 7. Remove from oil and drain on paper towels. Let cool for a few minutes before serving.
