Spicy Southern Fried Chicken

Ingredients:

  • 4 pieces Chicken breasts
  • 2 cups Buttermilk
  • 2 cups All-purpose flour
  • 2 tsps Cayenne pepper
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • sufficient for frying Vegetable oil

Instructions:

  1. 1. Rinse the chicken breasts and pat dry.
  2. 2. In a bowl, combine buttermilk, 1 tsp of cayenne pepper, salt, black pepper and garlic powder. Mix until well combined. Add the chicken breasts and marinate for at least 2 hours (or overnight for best results).
  3. 3. In another bowl, combine the flour with the remaining tsp of cayenne pepper. Mix well.
  4. 4. Heat the vegetable oil in a deep skillet or fryer to about 350ºF (175ºC).
  5. 5. Remove the chicken breasts from the buttermilk marinade, allowing the excess to drip off. Dredge the chicken in the flour mixture, shaking off the excess.
  6. 6. Fry the chicken breasts, a few pieces at a time, until golden brown and crispy, about 10-12 minutes. Make sure the chicken is fully cooked, reaching an internal temperature of 165ºF (74ºC).
  7. 7. Remove from oil and drain on paper towels. Let cool for a few minutes before serving.
