Spicy Sichuan Pork Stir-Fry

Ingredients:

  • 1 pound Boneless pork chops
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic
  • 1 inch piece Fresh ginger
  • 4 Green onions
  • 1 tablespoon Sichuan peppercorns
  • 6 Red dried chilis
  • 2 tablespoons Soy sauce
  • 1 tablespoon Chinese vinegar
  • 1 teaspoon Sugar

Instructions:

  1. Cut the pork into thin slices and set aside.
  2. Heat the vegetable oil in a wok or large frying pan on medium heat.
  3. Add the garlic, ginger, green onions, Sichuan peppercorns and red dried chilies. Stir fry for 2 minutes until fragrant.
  4. Increase the heat to high, add the pork and stir-fry until it’s no longer pink.
  5. Stir in the soy sauce, vinegar and sugar, continue cooking for another 2 minutes.
  6. Serve hot with steamed rice.
