
Spicy Shrimp Jambalaya

Ingredients:
- 2 tbsp Olive Oil
- 1 medium Onion
- 2 medium Bell Peppers
- 3 Garlic Cloves
- 100 g Spicy Chorizo
- 1 can Canned Tomatoes
- 1 cup Rice
- 500 g Shrimp
- 2 cups Chicken Stock
- 1 tsp Cayenne Pepper
- To taste Salt
- To taste Black Pepper
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the onion, bell peppers, and garlic. Cook for 5-7 minutes until they start to soften.
- Add the chorizo and cook until it starts to brown.
- Add the canned tomatoes and rice. Stir to combine all the ingredients well.
- Pour in the chicken stock and bring the mixture to a simmer. Cover and let it cook for 20 minutes.
- Stir in the shrimp and cook for another 5-7 minutes until the shrimp is cooked through.
- Season with cayenne pepper, salt, and black pepper. Give it a good stir.
- Serve warm and enjoy.
