Spicy Shrimp Jambalaya

Ingredients:

  • 2 tbsp Olive Oil
  • 1 medium Onion
  • 2 medium Bell Peppers
  • 3 Garlic Cloves
  • 100 g Spicy Chorizo
  • 1 can Canned Tomatoes
  • 1 cup Rice
  • 500 g Shrimp
  • 2 cups Chicken Stock
  • 1 tsp Cayenne Pepper
  • To taste Salt
  • To taste Black Pepper

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onion, bell peppers, and garlic. Cook for 5-7 minutes until they start to soften.
  3. Add the chorizo and cook until it starts to brown.
  4. Add the canned tomatoes and rice. Stir to combine all the ingredients well.
  5. Pour in the chicken stock and bring the mixture to a simmer. Cover and let it cook for 20 minutes.
  6. Stir in the shrimp and cook for another 5-7 minutes until the shrimp is cooked through.
  7. Season with cayenne pepper, salt, and black pepper. Give it a good stir.
  8. Serve warm and enjoy.
