
Spicy Shakshuka

Ingredients:
- 2 tablespoons Olive oil
- 2 pieces Bell peppers (diced)
- 5 pieces Tomatoes (diced)
- 3 cloves Garlic (minced)
- 1 teaspoon Cumin
- 1/2 teaspoon Cayenne pepper
- 6 pieces Eggs
- 1/4 cup Parsley (chopped)
- to taste Salt and pepper
Instructions:
- 1. Heat olive oil in a large skillet or frying pan over medium heat. Add diced peppers and sauté until softened.
- 2. Stir in the diced tomatoes, garlic, cumin, cayenne pepper, salt, and pepper. Cook for about 10 minutes, or until the tomatoes have formed a thick sauce.
- 3. Make small wells in the sauce and carefully crack an egg into each. Cover the pan and cook for about 7-10 minutes, or until the eggs are cooked to your desired level of doneness.
- 4. Sprinkle the shakshuka with chopped parsley and serve warm, with bread on the side if desired.
