Spicy Shakshuka

Ingredients:

  • 2 tablespoons Olive oil
  • 2 pieces Bell peppers (diced)
  • 5 pieces Tomatoes (diced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Cumin
  • 1/2 teaspoon Cayenne pepper
  • 6 pieces Eggs
  • 1/4 cup Parsley (chopped)
  • to taste Salt and pepper

Instructions:

  1. 1. Heat olive oil in a large skillet or frying pan over medium heat. Add diced peppers and sauté until softened.
  2. 2. Stir in the diced tomatoes, garlic, cumin, cayenne pepper, salt, and pepper. Cook for about 10 minutes, or until the tomatoes have formed a thick sauce.
  3. 3. Make small wells in the sauce and carefully crack an egg into each. Cover the pan and cook for about 7-10 minutes, or until the eggs are cooked to your desired level of doneness.
  4. 4. Sprinkle the shakshuka with chopped parsley and serve warm, with bread on the side if desired.
