
Spicy Seafood Ratatouille

Ingredients:
- 2 tablespoons Olive oil
- 3 cloves Garlic
- 1 medium Onion
- 1 Red bell pepper
- 2 medium Zucchini
- 1 small Eggplant
- 4 medium Tomatoes
- to taste Crushed red pepper flakes
- 1 pound Seafood mix (shrimp, squid, mussels)
- to taste Salt
- to taste Black pepper
- 10 Fresh basil leaves
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the garlic and onion and cook until the onion becomes translucent.
- Chop the red bell pepper, zucchini, eggplant and tomatoes into bite-sized pieces. Add them to the pan and stir well.
- Add crushed red pepper flakes to taste, along with the seafood mix. Season with salt and black pepper. Stir everything together and let it cook.
- Cover the pan and let everything simmer for around 40 minutes, until the vegetables are cooked down and the flavors have melded together.
- Right before serving, stir in fresh basil leaves for added freshness. Serve hot.
