Spicy Seafood Ratatouille

Ingredients:

  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 medium Onion
  • 1 Red bell pepper
  • 2 medium Zucchini
  • 1 small Eggplant
  • 4 medium Tomatoes
  • to taste Crushed red pepper flakes
  • 1 pound Seafood mix (shrimp, squid, mussels)
  • to taste Salt
  • to taste Black pepper
  • 10 Fresh basil leaves

Instructions:

  1. Heat the olive oil in a large pan over medium heat. Add the garlic and onion and cook until the onion becomes translucent.
  2. Chop the red bell pepper, zucchini, eggplant and tomatoes into bite-sized pieces. Add them to the pan and stir well.
  3. Add crushed red pepper flakes to taste, along with the seafood mix. Season with salt and black pepper. Stir everything together and let it cook.
  4. Cover the pan and let everything simmer for around 40 minutes, until the vegetables are cooked down and the flavors have melded together.
  5. Right before serving, stir in fresh basil leaves for added freshness. Serve hot.
