
Spicy Seafood Linguine

Ingredients:
- 400 grams Linguine pasta
- 2 tablespoons Olive oil
- 3 Garlic cloves, finely chopped
- 1 teaspoon Red chilli flakes
- 500 grams Mixed fresh seafood (prawns, scallops, calamari)
- 400 grams Chopped tomatoes
- 200 milliliters Dry white wine
- 2 tablespoons Parsley, chopped
- Salt and black pepper to taste
Instructions:
- Cook the linguine in a large pan of boiling salty water until al dente.
- Meanwhile, heat the olive oil in a large pan over medium heat. Add the garlic and chilli flakes, cook for 1-2 minutes until fragrant.
- Add the mixed seafood to the pan, cook for 2-3 minutes until just starting to turn pink.
- Pour in the wine and the chopped tomatoes. Bring to a simmer and cook for about 10 minutes, until the seafood is cooked through and the sauce has reduced slightly.
- Drain the linguine and add it to the seafood sauce. Toss well to combine, making sure all the pasta is coated in the sauce.
- Stir through the parsley, season with salt and black pepper to taste. Serve immediately.
