Spicy Seafood Linguine

Ingredients:

  • 400 grams Linguine pasta
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, finely chopped
  • 1 teaspoon Red chilli flakes
  • 500 grams Mixed fresh seafood (prawns, scallops, calamari)
  • 400 grams Chopped tomatoes
  • 200 milliliters Dry white wine
  • 2 tablespoons Parsley, chopped
  • Salt and black pepper to taste

Instructions:

  1. Cook the linguine in a large pan of boiling salty water until al dente.
  2. Meanwhile, heat the olive oil in a large pan over medium heat. Add the garlic and chilli flakes, cook for 1-2 minutes until fragrant.
  3. Add the mixed seafood to the pan, cook for 2-3 minutes until just starting to turn pink.
  4. Pour in the wine and the chopped tomatoes. Bring to a simmer and cook for about 10 minutes, until the seafood is cooked through and the sauce has reduced slightly.
  5. Drain the linguine and add it to the seafood sauce. Toss well to combine, making sure all the pasta is coated in the sauce.
  6. Stir through the parsley, season with salt and black pepper to taste. Serve immediately.
