Spicy Seafood Biryani

Ingredients:
- 2 cups Basmati rice
- 500 grams Mixed seafood
- 2 medium size, thinly sliced Onions
- 2 medium size, chopped Tomatoes
- 3 finely chopped Garlic cloves
- 1 inch piece grated Ginger
- a handful chopped Cilantro leaves
- a handful chopped Mint leaves
- 3 slit Green chilies
- 2 tablespoons Spicy Biryani Masala
- 4 pieces Salmon
- to taste Salt
- to taste Pepper
- 3 tablespoons Cooking oil
Instructions:
- Rinse the rice until the water runs clear. Soak it in water for 30 minutes, then drain.
- Heat oil in a pan and fry the onions until translucent. Add the ginger and garlic, and sauté for 1-2 minutes.
- Add the tomatoes, mint leaves, cilantro and green chilies, and sauté until the tomatoes are soft.
- Add the Biryani masala and sauté for a few more minutes until the spices are well blended with the other ingredients.
- Add the drained rice to the pot, then pour in enough water to cover the rice by about 1 inch. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is half cooked.
- Add the seafood to the pot, sprinkle with salt and pepper, and continue cooking until the rice is fully cooked and the seafood is tender.
- Turn off the heat, fluff the rice and seafood with a fork, and serve hot.
